MEAT-HUNTINGRECIPIES:

Wild Boar with Green Olives, in a casserole pot

Ingredients: 

1        kg                 Wild Boar Shoulder (cut in pieces)    

1 ½    cup               Dry White Wine 

¾       cup               Olive Oil      

2        cloves           Garlic (crushed)

1        teaspoon     Cumin

1                              Bay Leaf

30                            Green Olives (pitted)

                                Salt - Pepper

Preparation:

  1. Place meat in a clay pot. Pour the wine, olive oil, bay leaf, garlic, salt and cumin.
  2. Put the pan in preheat oven at 220°C, without cover and let it boil for 8-10 minutes.
  3. Then cover the pan, low the heat and cook for about 2 hours.
  4. Add the olives and continue cooking for 15 minutes, without pot’s cover.
