MEAT-POULTRY RECIPES:
Salad with Duck & Mushrooms
Ingredients:
8 pc. Duck Breast (or Speck) fillets
50 g Butter
1 tablespoon Paprika
Salt - Pepper
Dressing’s Ingredients:
200 g Green Salad (of your choice)
100 g Mushrooms (cut into thick slices)
25 g Butter
4 tablespoons Walnut Oil
3 tablespoons Balsamic Vinegar
3 tablespoons Half of Walnut Kernels "Butterfly" (roasted)
Preparation:
- Butter (with half of the butter) duck’s pieces, sprinkle with half of the paprika, salt and pepper and lay on grill.
- Bake for about 3 minutes, turn them over and repeat the procedure (butter, paprika, salt and pepper).
- Continue baking for about 3 minutes (or until we consider that the meat is ready). Remove from the oven and set aside.
- Mix coconut oil, olive oil and vinegar, season with salt and set our mixture aside.
- In a frying pan, heat the butter and cook the mushrooms for about 3 minutes (or until they get soft enough).
- Add the walnuts and stir for about 2 – 3 minutes more.
- Place the meat in a serving dish, garnishing with the salads and warm mushrooms.
- Sprinkle with the dressing and serve immediately.
