MEAT-POULTRY RECIPES:

Salad with Duck & Mushrooms

Ingredients:           

8          pc.                     Duck Breast (or Speck) fillets

50        g                        Butter

1          tablespoon       Paprika

      Salt - Pepper

Dressing’s Ingredients:

200     g                         Green Salad (of your choice)

100     g                         Mushrooms (cut into thick slices)

25        g                        Butter

4          tablespoons     Walnut Oil

3          tablespoons     Balsamic Vinegar

3          tablespoons     Half of Walnut Kernels "Butterfly" (roasted)

Preparation:

  1. Butter (with half of the butter) duck’s pieces, sprinkle with half of the paprika, salt and pepper and lay on grill.
  2. Bake for about 3 minutes, turn them over and repeat the procedure (butter, paprika, salt and pepper).
  3. Continue baking for about 3 minutes (or until we consider that the meat is ready). Remove from the oven and set aside.
  4. Mix coconut oil, olive oil and vinegar, season with salt and set our mixture aside.
  5. In a frying pan, heat the butter and cook the mushrooms for about 3 minutes (or until they get soft enough).
  6. Add the walnuts and stir for about 2 – 3 minutes more.
  7. Place the meat in a serving dish, garnishing with the salads and warm mushrooms.
  8. Sprinkle with the dressing and serve immediately.
