FISH-SEAFOOD RECIPES:

Roasted Salmon, with Apple – Dill Sauce

Ingredients:          

900   g                       Salmon Fillet

½      cup                  Apple Juice

½      cup                  Apple (chopped)

2       tablespoons    Butter

2       tablespoons    Dill (fresh - chopped)

1       tablespoon     Lemon Juice

1       teaspoon        Cornstarch

1       teaspoon        Mustard

                                  Salt - Pepper

Preparation:

  1. Wash salmon, drain well and sprinkle all over with salt and pepper.
  2. Place the salmon in aluminum foil (or baking paper), shut well all sides and bake.
  3. Melt the butter in a frying pan add the flour, mustard, dill and mix.
  4. Continue stirring, adding gradually the apple and lemon juice and the chopped apple.
  5. Remove the foil from the fish (skin will also be removed simultaneously with foil) and place it on a plate.
  6. Serve garnishing fish with the dressing we made, adding some extra mustard if needed.
