STUFFED FRESH PASTA RECIPIES:
Fagottini Gorgonzola e Noci,
in"Guascone" Sauce (with Prosciutto & Tomato)
Ingredients:
520 g Fagottini Gorgonzola e Noci “Canuti”
100 g Ham (Prosciutto San Daniele or Parma)
100 g Butter
100 g Tomatoes (chopped)
50 g Walnuts grated (toasted)
¼ L Fresh Cream
2 tablespoons Olive Oil
1 bunch of Rocket (chopped)
1 Shallot (chopped)
Salt - Pepper
Preparation:
- Melt the butter with the oilin a pan.
- Add the ham cut into strips, the grated walnuts and fry gently.
- Add the cream and taste with salt and pepper.
- Add the rocket and the shallot and cook in slow heat for about 10 minutes.
- Cook the Fagottini Gorgonzola e Noci "Canuti", in abundant boiling salted water, drain and toss with the sauce.
- Serve hot, garnishing with the finely chopped tomatoes.
