STUFFED FRESH PASTA RECIPIES:

Fagottini Gorgonzola e Noci,

in"Guascone" Sauce (with Prosciutto & Tomato)

 

Ingredients:

520     g                            Fagottini Gorgonzola e Noci “Canuti”

100     g                            Ham (Prosciutto San Daniele or Parma)

100     g                            Butter

100     g                            Tomatoes (chopped)

50       g                            Walnuts grated (toasted)

¼        L                             Fresh Cream

2          tablespoons        Olive Oil

1          bunch                  of Rocket (chopped)

1                                        Shallot (chopped)

                                          Salt - Pepper

Preparation:

  1. Melt the butter with the oilin a pan.
  2. Add the ham cut into strips, the grated walnuts and fry gently.
  3. Add the cream and taste with salt and pepper.
  4. Add the rocket and the shallot and cook in slow heat for about 10 minutes.
  5. Cook the Fagottini Gorgonzola e Noci "Canuti", in abundant boiling salted water, drain and toss with the sauce.
  6. Serve hot, garnishing with the finely chopped tomatoes.
