FRESH PASTA RECIPIES:

Penne,

with Salmon smoked, Salmon Eggs & Vodka

 

Ingredients:           

500      g         Penne,

200      g         Salmon smoked (sliced)

50        g         Salmon Eggs

50        g         Butter

100      ml        Vodka

200      ml        Fresh Cream

1 – 2                Shallots (chopped)

                        Dill (chopped)

             White Pepper

Preparation:

  1. Cook the Penne in abundant boiling salted water and drain.
  2. Meanwhile,pour the butter in a saucepan and brown the shallots.
  3. Add the salmon and mix well, over the heat, for 1 – 2 more minutes.
  4. Moist with the Vodka and allow to evaporate.
  5. Finally add the cream, pepper and dill.
  6. Simmer until the sauce is thickened.
  7. Mix out pasta with the salmon sauce, and serve garnishing with the salmon eggs.
